Achieve the monthly and annual Key Performance Indicators (KPIs) established.

Internal Audits and Compliance:
  • Conduct comprehensive internal audits on a monthly basis for Food & Beverage (Culinary & Service) departments
  • Ensure all processes, standards, and administration align with Project : Black standards, overseeing corrective actions by the Venue Operations Managers.
  • Monitor the Corrective Action Plan progress, providing objective feedback to support compliance.
Training and Development:
  • Provide thorough training to venues on conducting internal audits, tracking progress, and ensuring comprehensive follow-up.
  • Develop and conduct regular training sessions for venues related to standards, procedures, processes, health, and safety.
  • Ensure the training program covers all critical aspects of Food & Beverage.
Standardization and Certification:
  • Set up comprehensive quality standards for Food & Beverage.
  • Oversee the effective implementation of procedures and policies, leading improvement projects for guest satisfaction and department certifications
  • Establish Guest Survey, Mystery Shopper programs, and Guest Defect Reporting System.
Inventory and Emergency Management:
  • Monitor, control, and provide recommendations on departmental inventory, ensuring efficient management.
  • Evaluate the effectiveness of departments' emergency teams and assess their response to handling emergencies.
  • Conduct regular audits on inventory management processes and emergency preparedness.
Hygiene, Safety, and Environment Oversight:
  • Oversee Hygiene and Sanitation programs and Environment, Health, and Safety standards.
  • Ensure compliance with accreditation requirements and provide consultancy on measurement and continuous improvement.
  • Develop and implement hygiene and safety programs for Food & Beverage.
Quality Assurance and Defect Resolution:
  • Appraise guests' requirements and ensure satisfaction with delivered products and standards.
  • Identify and analyse recurring issues, defects, and problems, recommending and facilitating solutions.
  • Implement corrective measures and track resolution progress, ensuring long-term quality assurance.
Record Keeping and Reporting:
  • Maintain meticulous records of quality reports, statistical reviews, and relevant documentation.
  • Provide regular, detailed reports on audit findings, corrective actions, and continuous improvement initiatives.
  • Generate comprehensive reports for the management, highlighting areas of improvement and success.
